Any way to have them build my car with previous gunmetal stock 18's instead of new polished 18's? Possible they could use old stock. I prefer the gunmetal..

I am sure your dealership deals with a wheel company that can coat them for you. Mine did it on my X5 wheels,

May not be possible, otherwise just have them stripped/blasted and re-sprayed in any shade of grey you want

They won't build it like that from the factory, but if there are any still left in stock they could sell them to you at the parts counter and put them on at the dealership.

Or, just buy a set from the buy/sell section in this forum and put them on when the car arrives. This is probably the cheapest way to go, but I don't know how rare the dark 18s are becoming these days so it may take some time for some to come up for sale.
