NT-05 Sizes for 19" factory wheels

Hi All, by way of background, I have an '09 E90 M3 w/ the optional 19" factory wheels. ~14k miles + 4 autocrosses later, my original PS2's are pretty much done for, and I'm considering 3 different replacements: the Nitto NT-05's, Vredestein Sessanta's, and the Yoko ADVAN AD08 (BTW, I live in San Diego and really don't need to worry about either wet or cold weather performance). I'd like to size up a bit from stock, going with 255/35 & 275/35 for F/R, respectively. Both the Vred's and Yoko's appear to be available in these sizes; however, the Nitto's only appear to come in 245 & 275/35's. This seems like a big stagger to me, resulting in bad understeer. Any thoughts on this combination? More importantly, any experience?
