Is there a way to set your lights...

so that when you open the door the lights do not turn on?

I believe after you open the door and the lights turn on inside the car, you hold the center button that you would normally use to turn the lights on for something like five seconds and this deactivates it until you push it again.

The stalker setting. So no one sees you getting into the car after peeking through the house windows???

When you say center button, you are refering to the key fob, right?

Yep; push center button until lights go out. Had same issue when car was new. Since manual didn't mention this trick, thought was SOL. But M3post came to the rescue . If you want them back on, just push the center button again and they'd immediately light up again. Good day.
