BBS are mighty fine wheels

I'm going to stick with 18" for my Winter set-up. Any reason why you are going down to 17"

Can I just buy snow tires and install them on the stock wheels? They should be able to use the stock tire pressure sensors, right?

Can you? Yes. Should you? Probably not. Swapping tires and off isn't the best thing in the world for them, and you're better off running a square and narrower setup for winter. In any event, $150-$200 for "disposable" winter rims isn't dumb money to spend.

Regardless if you swap on and off every season the mounting/balancing labor will add up quickly to the price of a set of winter rims.
