Road Trip! This is why I bought my X3.

We are taking our first of many family road trips in our X3. What I am looking for is some travel advice from my trusted fellow adventurers. We will be traveling around the middle of March. We are going from LA to Las Vegas (family related), then through Utah, next to Colorado, down to NM, a dash of AZ, then a jaunt through Palm Springs and back home.
My questions are as follows...
Does anyone here have any good scenic routes?
Any ideas on where we must go?
Any reccommendations on world class lodging?
Are there any specific monuments that we MUST see?
And finally, most important, which restaraunts do we HAVE to eat at?

Palm Springs: There's a lot to do there, if you're there for a short time. Elmer's is really good for breakfast. And there's tons of great restaurants for dinner depending on what kind of food you're into. Check out BMW of Palm Springs while you're there (I used to work there, and it's a gorgeous dealership). If you're into hiking, there are several great options. Indian Canyon, Tahquitz Canyon, Joshua Tree, and the aerial tram. The best thing about Palm Springs though is laying out by the pool.
