I've searched around on this, but if there's a definitive answer I haven't found it:

How do you know which port of entry and/or VDC you car is bound for? If I have a delivery bound for Dallas, will it always go through the same VDC?

It does.
On west coast BMW use port Hueneme (near Oxnard, CA, 60 ml NW of Los Angeles) and then tracking from there all the way to Washington state

You are correct, it will enter Brunswick, GA, then get railed/trucked to your dealer.

Does that mean you know the ship already? Ours is waiting on a boat in Brevenhaven, but I don't know what boat it will be on yet.
