So many ways to prepare it. And it's cheap and healthy.
There was a time when you couldn't get me to try it. But then I discovered Extra Firm tofu and some good recipes. I'm still not a fan of tofu in most restaurants. I like mine firm and browned or crispy. If it's mushy, I can't abide.

Too hot to fire up the stove or oven. So I whipped up a Puttanesca Tomato-Chickpea salad. Was delicious. I just wish I had some tasty New England grown tomatoes. Midwest tomatoes just don't have as much flavor.

Yes indeed. Probably could have used more. And more Kalamata olives as well. I would have lightly salted the diced tomatoes before adding them to the salad, but Wifey is trying to reduce her sodium intake.

No, but the salad itself sat at room temp for maybe 30-40 minutes before we ate it. I'll try leaving the tomatoes out for a while next time.

Try a new store label (Irresistibles) version as it looked good on the box.
Well, despite that I cook it almost twice as long as the instruction called, the crust did not cut it... Actually it was not crisp enough to cut through it in one strike. Also, it was rather cheap on the cheese but I could not resit the 2 for $8 deal... I'll cook the other one at 425 and see what happen. |

Shepard's pie for dinner later. I like to refrigerate it first, let it sit and then re-heat portions. It holds better and doesn't fall apart.
