It's a combination of things, but it's primarily due to Ferrari using a "Flat" crank design. In conjunction with very careful intake and exhaust tuning, you’re left with that signature Ferrari howl. I personally think the 360 Modena was one of the best sounding Ferrari’s every made. The F-430 would destroy it on the track, but it looses a little something in terms of exhaust note.

Can't beat the F355 though for sounds especially with a tubi exhaust. I think that iteration is the best sounding Maranello 8.
