Carplay uses WiFi to transfer data between your phone and the car's system. I read on another thread here that WiFi "moves" more data, and faster, than a bluetooth connection. Thus, audio quality is enhanced using Carplay, and should sound better than just streaming over bluetooth.
The other person posting about it cited numbers, but anecdotally, I've done it both ways, and listening with Carplay has a "richer" sound.
