You seem to know what you are "talking" about here.. Is it possible to unplug the function (leaving it open), at stand-still, and if unplugged, will it trigger an error in the car?

So the trick is to catch it on a cold start. For the first few seconds the valve should be wide open for catalyst warm up. During that time you can jump under and unplug the valve while it's open. This will have no visible faults. It will be a shadow fault that doesn't alarm the driver. Make sure you tape up and seal both the plug and receptacle on the motor.
