Because the ceramic catalytic converter becomes super hot from the exhaust gases being pushed through its channels. Without the catalytic converter (catless pipes) the heat just flows through the pipe, there isnt an obstruction (cat) to absorb the exhaust heat.

For what it's worth the catalytic converter uses the heat to perform the chemical reaction to replace the more toxic/pollutive exhaust gases with less toxic/pollutive exhaust gases.
